1 cup milk, divided

100g soft goat cheese

1 1/2 cups flour

1 tablespoon baking powder

1 1/2 teaspoons sugar

1/2 teaspoon salt

3/4 stick butter (6 tablespoons)

1 large egg

1 bunch green garlic, ends trimmed


Preheat the oven to 400°C o and oil or line a muffin pan with liners.

2 tablespoons milk and goat cheese, mixed in a small basin

Sift together the flour, baking powder, sugar, and salt in a large mixing basin. Melt the butter in a small saucepan over low heat. In a small bowl, mix together the remaining milk and egg, then gently drizzle in the melted butter, stirring as you pour.

Finely chop the green garlic (white and green portions) and add it, along with the butter combination, to the flour mixture. Stir until everything is just mixed. Distribute half of the batter equally among the muffin cups, followed by 2 tablespoons of goat cheese filling and the remaining muffin batter.

Bake the muffins in the center of the oven for 15-20 minutes, or until brown and a toothpick inserted into one of the muffins comes out clean.
